Hi Mona! Your version of Maque Choux sounds delicious–I’ll give it a try the next time corn goes on sale at our local market 🙂 If you have recommendations for an étouffée recipe, I’d love to hear them; I plan on making a crawfish étouffée when I get the chance!

Both my husband dislike bell peppers and never use them in any Cajun dish. We make ours a little differently, we use a heavy pot, preferably cast iron and carmelize the corn, making it on the brown side of color and drawing out sugars. We use diced tomatoes instead of tomato sauce and add green onions. Always a favorite with friends. Would love to see your étouffée recipe.
