I only make two small changes: I switch steps 3 & 4, so the curry powder can ‘bloom’ in the ghee for a minute or so – until I can smell it – before the cauliflower goes in, and I toast the nuts a bit (I use the microwave), since I think that improves both the flavor and the texture.
