I bake about one a week in the fall, especially after we go apple picking (hoorah for east coast apples!). Sometimes I throw old fashioned oats in the crumble. It’s fun to mix it up a bit. I also like to do a mix of brown and white sugar with the apples. Quebecors don’t like spiced apple pies, so I have to go light on the spices. Adding brown sugar helps add a carmel apple flavor the pie. I don’t usually bake with granny smiths, just because of the variety we have available in the fall here, so I usually end up with a mix of firm and soft apple types. I find that corn starch or potato starch works better to keep everything from getting too liquid than regular flour.

Anyway, I obviously bake apple pies waaay too often from Aug. to Dec., because I could keep going with my comments/variations! Long story short, yours looks awesome, and I’d love to try a slice!
